Strawberry or Raspberry Syrup
1 pound berries fresh or frozen
1 cup sugar
1/2 cup water
Place water and sugar together in a large, microwave-safe container. Microwave until water boils. Stir to dissolve sugar. Add berries (at this point they can still be frozen if you like) and microwave on 1/2 power until mixture reaches a simmer. Use a stick blender to puree everything together. (This is the reason for the large container to keep this step from getting messy.) Refrigerate for short term use or freeze almost indefinitely.
I'm assuming many kinds of berries would work with this, but so far I've only tried the two listed.
