Bleu Cheese Sauce
1 onion, diced
2 cloves garlic, chopped
500mls chicken stock
100g blue cheese, or to taste
500mls cream
2 handfuls spinach, washed and chopped
Rind of 2 lemons
Small bunch thyme, chopped
Extra Parmesan
Saut onion and garlic until lightly coloured. Add chicken stock and reduce by half. Add cream and bring to a simmer. Add thyme, blue cheese and lemon rind. Season with salt and pepper. The sauce should be quite thin. Add chopped spinach just before serving over gnocchi.
